Branded eight- and ten-inch pans sat at $20.99 to $24.99; twelve-inch pans at $35.99 to $43.39; and four listings ran past $100, topping out at $269.95 for a skillet and lid. What a $20 pan still needs from you

Everything at this price point is sold pre-seasoned, which is true and slightly misleading. Pre-seasoned means it will not rust in the box; it does not mean it is non-stick yet.

  1. The factory coat is thin. It is a sprayed and baked oil layer that gets you started. A working surface is built by cooking on it.
  2. Rough-cast is the modern norm. The machined-smooth surface of pre-war pans is why collectors chase them; a new pan gets smoother with use rather than starting that way.
  3. Soap is not the enemy. Standing water is. Dry it on the hob, not on the rack.
  4. Acid strips seasoning. A long tomato braise in a young pan will take you back to bare iron. Enamelled cast iron exists precisely for that job.

None of this is a reason to buy the expensive pan. It is a reason to buy the cheap one and use it, which is the honest recommendation on a page about price.
